Chef’s Table Experience- A Wine Tasting & Dinner

Limited to 20 guests

with special guest Jeff Fisher, Head Coach of the Tennessee Titans

 

5:30 p.m. to 6:15p.m. Guests picked-up by Arranged Car Service

6:30 p.m. to 7:30p.m. Champagne Tasting and Amuse Bouche

7:30 p.m. to 10:30 p.m.  Dinner & Primary Tasting

 

 

Featuring a vertical tasting of the wines of Chateau Cheval Blanc, St. Emilion Gran Cru Classe A.   Vintages to be presented include 1947, 1959, 1964, 1975, 1982, 1990, 1995, 1996, 1997, 1998, 1999, 2000, 2000 (Petit Cheval) and 2004.

 

And also featuring a mini-vertical of the white wine of Chateau Haut Brion. Vintages to be presented include 1995, 1996, 1997, 1998 and 2000.

 

Guest will experience a number of additional “surprise” wines and spirits will be presented throughout the evening.

An Afternoon of Food and Wine –

Spanish Influence Served Family Style

Prepared by Chef Marc Fosh

 

1:30 p.m. – 2:00 p.m.   Guests will park at a local parking lot and be shuttled to the home of Stephen and Robin Collins.  Please contact the T.J. Martell Foundation at (615) 256-2002 regarding the parking details.

 

2:00 p.m. – 3:30 p.m.   Enjoy a selection of Spanish wine, tapas, the silent auction and the beautiful setting surrounding Stephen and Robin’s Home.  Guests will enjoy over 40 different Spanish wines with wine expert, guest Sabin Bokus, owner of Vinucation.  

3:30 p.m. - 6:00 p.m.  Paella dinner prepared by Chef Marc Fosh

About Marc Fosh:

Chef Fosh is the executive chef and director of Bacchus Restaurant at the Read’s Hotel in Majorca, Spain. In the 2008 edition of Spain’s top restaurant guide “Gourmetour,” Bacchus is rated one of the top 20 restaurants in the whole of Spain.  Other awards include:

·        Restaurant of the Year 2005 - Marcellinos Guide

·        Restaurant Service of the Year 2004 - Al Punto Gastronomic Guide

·        “Most Excellent Hotel Restaurant 2006” - Condè Nast Johansens

 

Both Marc Fosh and the restaurant are rated by experts as one of the best in Spain and were awarded a Michelin Star in 2003.

 

Marc describes his cuisine as follows:

"My cuisine is creative, a blend of traditional French, modern mediterranean and asian minimalism. To me, food should be light and fresh, with direct flavours, using seasonal produce that let the ingredients speak for themselves."

 

Marc, a fluent Spanish speaker, already had a background in Michelin-starred restaurants in both the U.K. and France before moving to San Sebastian, the heart of Spanish gastronomy in the Basque country. He eventually settled in Majorca.  In 2004 Marc opened Fosh Food, a new culinary centre to present the best of food and wine. About Pritam Banerji
 
For over 30 years, Pritam Banerji has been collecting, tasting and sourcing fine wines. Owner and CEO of Irvine Wine Imports based at Irvine, California, Pritam's first exposure to wine started in Switzerland where he spent 25 years. During his monthly trips to Burgundy, Pritam deepened his knowledge about Burgundy by developing personal relationships with such famous wine growers as Jean-Frnaçois Coche-Dury, Laurent Ponsot and Jean-Nicolas Méo. Thereafter, his subsquent visits to Chateauneuf-du-Pape ushered him one day into the magical cellar of Henri Bonneau, one of the most incredible personalities in the wine world. After having worked for 18 years with Caterpillar, Pritam switched over to the wine profession in 1997 when he joined the Swiss company, Internet Wine Consulting, as CEO and managing partner. Pritam regularly organized wine tasting dinners with collectors at various 3 star Michelin restaurants in Europe. Some of the greatest wines he tasted on such occasions include 1900 Ch.
